Lilly Pillies are a native plant to Australia and grows as trees, bushes and hedges. Gardening shows always boast about them being effective hedges to guard against nosy neighbours, but only recently did I discover that these hedges have small pink fruits, and what's more, that these small fruits are edible! Apparently, they're a kind of bush food in indigenous cultures which can be made into jams, juices, jellies, chutneys, and possibly more... (note to self: Lilly Pilly ferment?)

We got four plants a few years ago from the city council's free native plants program and I had seen some bees buzzing around its flowers. A week or so later, one of the bushes were full of pink speckles, which I harvested and tested out a jam recipe and a jelly one. First time cooking with foraged fruits!
