first kombucha, first fermentation
The SCOBY is looking pretty healthy, so it's about time I make some actual beverages.
First fermentation is to add some fresh tea and sugar to feed the healthy mama SCOBY - a bit like activating the starter for making sourdough - while a second fermentation, where only sugar (and other flavours) is added, is the process which carbonates the drink.
Ingredients for first fermentation: 1.5L of water, 100g raw sugar, 4 tea bags, 250g starter brew. Use clean hands and clean utensils.
